Dierendonck Rillettes Duck & Pork
Hendrik was given this recipe by a French friend, a fellow craft butcher. Small pieces of duck and pork are boiled very, very slowly, in a magnificent stock. The meat is then minced and prepared the traditional way, resulting in a particularly creamy rillette.
A delicacy on a good piece of bread, pure craftsmanship in a jar.
